Easy, spicy, roasted butternut squash

Ingredients
- 1 large butternut squash
- 1 tbsp coconut oil or avocado oil
- 1-2 teaspoons maple syrup
- Salt and cayenne to taste
Instructions
- Preheat the oven to 375 degrees.
- Peel and chop the butternut squash into bite-sized squares (or buy it pre-chopped, which is such a time-saver).
- Place on a large sheet pan lined with parchment paper.
- Place the coconut oil in a small bowl and melt in the microwave for 10-15 seconds beforehand and toss with the squash.
- Drizzle with a little maple syrup, then sprinkle with salt and cayenne.
- Salt.
- Toss well, and roast for about 20-30 minutes, until the butternut squash begins to brown. Salt to taste again, if necessary, and enjoy!
